Cogne Cream (Crema di Cogne) is one of the typical Italian foods made with whipping cream, sugar etc. For more details can see the table below :
Ingeredients :
- 500ml of whipping cream
- 100g of sugar
- 25g of dark chocolate (broken into small pieces/shards)
- 4 egg yolks
- Vanilla
- Rum
Instructions :
- Combine the egg yolks and sugar, and beat together, until you have a smooth creamy consistency, then add the vanilla.
- Place the cream on the heat and leave to simmer very gently (the cream should not boil; you just need it reach a temperature of 40/50 °c).
- Once the cream has begun to simmer, add the chocolate.
- Once the chocolate has melted, add half a glass of rum and the eggs crème.
- Serve in a cup with Valdostana Tegole (a delicate biscuit treat!).
