Cogne Cream Recipe

Cogne Cream (Crema di Cogne) 
is one of the typical Italian foods made with whipping cream, sugar etc. For more details can see the table below :

Ingeredients :

  • 500ml of whipping cream
  • 100g of sugar
  • 25g of dark chocolate (broken into small pieces/shards)
  • 4 egg yolks
  • Vanilla
  • Rum

Instructions :

  1. Combine the egg yolks and sugar, and beat together, until you have a smooth creamy consistency, then add the vanilla.
  2. Place the cream on the heat and leave to simmer very gently (the cream should not boil; you just need it reach a temperature of 40/50 °c).
  3. Once the cream has begun to simmer, add the chocolate.
  4. Once the chocolate has melted, add half a glass of rum and the eggs crème.
  5. Serve in a cup with Valdostana Tegole (a delicate biscuit treat!).
