Cogne Soup (Seupetta di Cogne)

Ingredients for Cogne Soup

  • 240g of Baldo rice
  • 150g of semi-whole meal bread
  • 200g thinly sliced Fontina cheese
  • 150g of butter
  • 1 glass of white wine
  • a pinch of cinnamon powder
  • meat stock
  • Salt

Instructions for Cogne Soup

  1. Toast the rice in a pan with butter and drizzle over the white wine.
  2. Add the boiling meat stock, season with salt and cook.
  3. Cut the bread into slices and brown them in some butter.
  4. Place the rice in an oven dish and alternate layers of bread with Fontina, repeating the same process twice; top off with a sprinkle of cinnamon.
  5. Melt a knob of butter and pour it over the top layer of cheese.
  6. Serve hot.
