Cogne Soup (Seupetta di Cogne) is one of the typical Italian foods made with Baldo Rice, semi-whole meal bread, thinly sliced Fontina cheese, butter, white wine, cinnamon powder, meat stock and Salt. For more details can see the table below :
Ingredients for Cogne Soup
- 240g of Baldo rice
- 150g of semi-whole meal bread
- 200g thinly sliced Fontina cheese
- 150g of butter
- 1 glass of white wine
- a pinch of cinnamon powder
- meat stock
- Salt
Instructions for Cogne Soup
- Toast the rice in a pan with butter and drizzle over the white wine.
- Add the boiling meat stock, season with salt and cook.
- Cut the bread into slices and brown them in some butter.
- Place the rice in an oven dish and alternate layers of bread with Fontina, repeating the same process twice; top off with a sprinkle of cinnamon.
- Melt a knob of butter and pour it over the top layer of cheese.
- Serve hot.
