Savoia risotto (Risotto alla Savoia) is one of the typical Italian foods made with Carnaroli rice, chopped onion etc. For more details can see the table below :
Ingeredients :
- 250g of Carnaroli rice
- 1 tablespoon extra-virgin extra virgin olive oil
- 30g of chopped onion
- 50g of butter
- 150g Fontina d’Aosta cheese
- 50g parmesan cheese.
- 80g of brown stock
- beef stock
- salt
Instructions :
- Sauté the onion with 50g of butter until it is golden.
- Add the rice, toast it and pour in the stock.
- When it is cooked, stir in the parmesan cheese, extra virgin olive oil and butter and adjust the salt if necessary.
- Plate the rice, making a well in the center of each serving and pour warm melted Fontina Cheese into it.
- Finally, decorate with the hot brown stock around the edge of the risotto.
