Savoia risotto (Risotto alla Savoia) Recipe


Savoia risotto (Risotto alla Savoia)
is one of the typical Italian foods made with Carnaroli rice, chopped onion etc. For more details can see the table below :

Ingeredients :

  • 250g of Carnaroli rice
  • 1 tablespoon extra-virgin extra virgin olive oil
  • 30g of chopped onion
  • 50g of butter
  • 150g Fontina d’Aosta cheese
  • 50g parmesan cheese.
  • 80g of brown stock
  • beef stock
  • salt

Instructions :

  1. Sauté the onion with 50g of butter until it is golden.
  2. Add the rice, toast it and pour in the stock.
  3. When it is cooked, stir in the parmesan cheese, extra virgin olive oil and butter and adjust the salt if necessary.
  4. Plate the rice, making a well in the center of each serving and pour warm melted Fontina Cheese into it.
  5. Finally, decorate with the hot brown stock around the edge of the risotto.
