Soup Vapellinense

Ingredients for Soup Valpellinense

  • 1 litre meat broth
  • 1/2 a cabbage
  • 120g of fontina
  • 300g of white bread (better homemade) sliced
  • cinnamon powder
  • 80 grams of butter

Instructions for Soup Valpellinense

  • In a baking dish, arrange a layer of bread and then a layer of fontina, alternate and end with layer of fontina.
  • Boil the cabbage in the meat stock.
  • Add the broth over the bread and wait for all to soften, and then add the steaming melted butter on top of the last layer.
  • Sprinkle with cinnamon;place in a preheated oven at 200 °c and cook for about 40 minutes, until the fontina is golden, and starting to form a crust.
  • Serve hot.
